Specify for cleaning first
Food and drink end up on this furniture. Wipeable surfaces and sealed seams last; fabric with an exposed seam collects everything and looks tired within a year.
It is worth accepting a slightly harder seat in exchange for a surface that still looks acceptable after eighteen months of lunches.
Match the height to the table
High stools need cafe or poseur height tables. Ordinary chairs need standard height. Mixing them is the most common error in this category and there is no fix after delivery.

How long will people sit
A perch for ten minutes and a lunch break for forty are different requirements. If your canteen is where people actually eat, include some standard height seating with backs rather than filling the room with stools.
